The secret to a perfect hard boiled egg? I will tell. Quite simple. Put the eggs in a pan- I prefer my trusty risotto number from All Clad. Old eggs work best as they are much easier to peel once finished. Cover with cold water and bring to a boil. As soon as you are at a boil, pull the pan off the heat and cover with a lid for exactly 12 minutes. Rinse in cold water with ice to stop the cooking process and then either store in the fridge or serve. Beautiful golden yolks- perfect for a salad niçoise.
This is a great method to do with quail eggs but reduce the sit time to 5 minutes. And then open them, cut in half, and top with caviar.
